Each sensor has a piezoelectric element inside. Upon accelerated, the element is bended and electrical chrage will be generated. 
This sensor is different from the semiconductor based acceleration sensor (capacitive type). There is a need to use an amplification circuit as the sensor does not content such built-in circuit.
